Ingredients

  • 3 tbsp. peanut butter creamy or crunchy
  • 1 large egg yolk
  • 1 tbsp. granulated sugar or brown sugar for a deeper flavor
  • 3 tbsp. all-purpose flour
  • tbsp. neutral oil e.g., canola or vegetable oil
  • ¼ tsp baking powder
  • 1 tbsp. chocolate chips optional, for extra indulgence

Equipment

  • 1 microwave-safe mug (8 oz or larger)
  • Measuring spoons
  • Spoon or small whisk
  • Microwave

Method

  1. Start by adding the peanut butter, egg yolk, oil, and sugar to a microwave-safe mug. Mix everything together using a spoon or a small whisk until the mixture is smooth and well combined.
  2. Next, add the flour and baking powder, stirring just until everything is mixed—make sure there are no dry spots of flour left. Gently fold in the chocolate chips so they’re evenly distributed throughout the batter.
  3. Microwave the mug on high for 45 to 60 seconds. Check it at 45 seconds; the top should look just set. Be careful not to overcook, or the cake might turn out dry.
