Ingredients
  

  • 1 box 15.25 oz lemon cake mix
  • 1 package 3.4 oz instant lemon pudding mix
  • 4 large eggs
  • cup fresh lemon juice
  • ½ cup vegetable oil
  • ¾ cup water
  • 2 cups confectioners’ sugar

Instructions
 

Prepare the batter

  • Preheat the oven to 175°C. In a large bowl, mix the lemon cake mix, lemon pudding mix, eggs, lemon juice, oil, and water until smooth and well combined.

Bake the cake

  • Pour the batter into a greased baking pan and bake for about 35 minutes, or until a toothpick inserted in the center comes out clean.

Poke the cake

  • Remove the cake from the oven and while it is still warm, poke holes all over the surface using the handle of a wooden spoon or a skewer.

Make the lemon glaze

  • In a small bowl, mix the confectioners’ sugar with a few tablespoons of lemon juice (taken from the measured amount) until a pourable glaze forms.

Soak and cool

  • Slowly pour the glaze over the cake, letting it sink into the holes. Allow the cake to cool completely before slicing and serving.

Notes

Note: For extra lemon flavor, chill the cake for one hour before serving. This helps the glaze fully absorb and enhances the moist texture.
