Ingredients
  

  • 1 box lemon cake mix
  • Ingredients required on the cake mix box usually 3 eggs, 120 ml oil, 240 ml water
  • 120 g lemon buttercream frosting
  • 1 –2 tsp fresh lemon zest
  • 1 –2 tsp fresh lemon juice optional, for extra lemon flavor
  • 350 –400 g white chocolate melting wafers or candy melts
  • 1 –2 tsp vegetable oil or shortening to thin the coating
  • Sprinkles for decoration

Instructions
 

Bake the Cake

  • Prepare the lemon cake mix according to the package instructions. Pour the batter into a baking pan and bake until a toothpick comes out clean. Let the cake cool completely before moving on.

Crumble the Cake

  • Once cooled, break the cake into fine crumbs using your hands or a fork and place the crumbs in a large mixing bowl.

Mix in Frosting and Lemon

  • Add the lemon buttercream, lemon zest, and lemon juice (if using). Mix until the crumbs come together into soft dough. Add small amounts of frosting only as needed—just enough for the mixture to hold its shape.

Shape the Cake Pops

  • Roll the mixture into 1-inch balls. Place them on a lined tray and chill in the freezer for 10–15 minutes to firm up.

Insert Sticks and Dip

  • Melt the white chocolate with a little oil or shortening until smooth. Dip the tip of each cake pop stick into the melted chocolate and insert it into a chilled cake ball. Once set, dip each cake pop fully into the chocolate, tapping gently to remove excess.

Decorate and Let Set

  • Add sprinkles while the coating is still wet. Stand the cake pops upright in a Styrofoam block and allow them to harden completely before serving.

Notes

Notes: If the cake pops crack or fall off the stick, the dough may be too dry add a small amount of frosting. If the coating is too thick, add a little more vegetable oil or shortening to thin it. Keep cake pops chilled until serving, especially in warm weather.
