Ingredients
  

For the Crust:

  • 115 g butter melted
  • 200 g almond flour
  • 100 g granular sugar substitute erythritol, monk fruit blend, etc.
  • 1 tbsp ≈12 g baking powder
  • 1 large egg
  • ¼ tsp ≈1 g salt
  • 1 tsp ≈5 ml vanilla extract

For the Filling:

  • 2 large eggs room temperature
  • 225 g cream cheese softened
  • 90 g powdered sugar substitute
  • 115 g butter softened
  • ½ tsp ≈2.5 ml vanilla extract
  • Powdered sugar substitute for dusting

Instructions
 

Prepare the Oven and Pan:

  • Preheat the oven to 175°C (350°F). Line an 8-inch round cake pan with parchment paper, making sure it covers the bottom and sides.

Make the Crust:

  • In a bowl, combine melted butter, almond flour, sugar substitute, baking powder, salt, egg, and vanilla extract. Mix until a smooth dough forms. Press the dough evenly into the bottom of the prepared pan.

Bake the Crust:

  • Bake the crust for 10–12 minutes until lightly golden. Remove from oven and let it cool slightly while preparing the filling.

Prepare the Filling:

  • In a mixing bowl, beat the softened cream cheese and butter together until smooth. Add the powdered sugar substitute and vanilla extract. Mix until creamy. Then, add eggs one at a time, beating well after each addition until fully incorporated.

Assemble the Cake:

  • Pour the filling over the pre-baked crust and spread evenly with a spatula. Return the pan to the oven. Bake for 20–25 minutes, or until the filling is set but still slightly jiggly in the center.

Cool and Serve:

  • Let the cake cool completely at room temperature, then refrigerate for at least 1 hour before slicing. Dust with powdered sugar substitute before serving.
