Ingredients
  

  • 3 rice cakes
  • 30 g 1.1 oz peanut butter
  • 70 g 2.5 oz dairy-free chocolate

Instructions
 

  • Break the dairy-free chocolate into small pieces and melt it gently using a microwave in short bursts (15-20 seconds), stirring in between, or melt it over a double boiler on the stove until smooth.
  • Take each rice cake and spread about 10 grams of peanut butter evenly over the top of each one.
  • Using a spoon, drizzle or spread the melted chocolate over the peanut butter layer on each rice cake. You can swirl it around a bit for an even coating.
  • Let the chocolate set for a few minutes at room temperature or place the rice cakes in the fridge for 5-10 minutes until the chocolate firms up. Once set, enjoy your chocolate rice cakes!

Notes

Note: For added crunch or flavor, sprinkle a pinch of sea salt, crushed nuts, or toasted coconut over the melted chocolate before chilling. You can also experiment with almond butter or hazelnut spread instead of peanut butter. This snack is gluten-free and can be made fully vegan depending on the chocolate used.
