Ingredients
  

For the Cake

  • 200 g all-purpose flour
  • 180 g brown sugar
  • 120 g unsalted butter softened
  • 2 large eggs
  • 120 ml milk
  • 8 g baking powder
  • 2 g baking soda
  • 3 g salt
  • 5 g vanilla extract

For the Butter Toffee Sauce

  • 150 g brown sugar
  • 100 g unsalted butter
  • 120 ml heavy cream
  • 5 g vanilla extract
  • 80 g toffee bits for topping

Instructions
 

Prepare the batter

  • Preheat the oven to 180°C. Grease the baking pan. In a bowl, cream the butter and brown sugar until light. Add eggs one at a time, and then mix in vanilla.

Mix dry and wet ingredients

  • In another bowl, combine flour, baking powder, baking soda, and salt. Add this to the butter mixture alternately with milk, mixing gently until smooth.

Bake the cake

  • Pour the batter into the prepared pan and bake for 35–40 minutes, until a toothpick inserted in the center comes out clean.

Make the toffee sauce

  • While the cake bakes, melt butter in a saucepan over medium heat. Add brown sugar and cream, stirring constantly. Simmer for 5 minutes until thick, then remove from heat and stir in vanilla.

Assemble and serve

  • Poke small holes in the warm cake and pour half of the hot toffee sauce over it. Sprinkle toffee bits on top. Serve warm with extra sauce drizzled over each slice.

Notes

Note: For extra richness, serve the butter toffee cake recipe warm with vanilla ice cream or whipped cream. The cake tastes even better the next day as the sauce fully absorbs into the sponge.
