In a mixing bowl, combine the butter and sugar. Mix briefly with a spatula, then beat with a mixer—starting on low and increasing to high—for about 10 minutes, until pale and fluffy.
Stir in the salt. Add eggs one at a time, mixing well after each. It may look curdled at this point; that’s okay. Scrape the bowl sides occasionally to ensure even mixing.
Sift together cake flour, milk powder, and almond flour. Gently add them into the batter along with the milk. Mix just until combined. Then fold in the chia seeds if you’re following the broader concept.
