  • 2 cups grated carrots about 2 large carrots

  • Pour the batter into your prepared tin and smooth the top. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean. Let it cool in the tin for 10 minutes before transferring to a wire rack to cool completely. Serve as is or top with a simple cream cheese frosting if desired.
